At Bella Loma Distillery, every bottle begins long before the first pour—rooted in the ancient landscapes of Mexico and the traditions of agave cultivation. Tequila and mezcal are not merely spirits; they are the result of patience, craftsmanship, and a deep relationship with the land.

The journey starts with the agave plant, which can take anywhere from 6 to over 20 years to mature, depending on the variety. Skilled farmers, known as jimadores, carefully harvest the agave by hand, removing its spiky leaves to reveal the heart of the plant—the piña. This core is rich in natural sugars, the essential foundation for both tequila and mezcal.

For tequila, typically made from blue Weber agave, the piñas are slowly cooked in ovens or autoclaves to convert complex carbohydrates into fermentable sugars. Mezcal, by contrast, embraces a more traditional and rustic approach: the piñas are roasted in underground pits lined with volcanic rock, imparting the distinctive smoky character that defines the spirit.

Once cooked, the agave is crushed to extract its juices, which are then fermented—often using natural airborne yeasts that lend unique regional character. The resulting liquid is distilled, usually twice, in copper or clay stills, refining it into a spirit that carries both the sweetness of agave and the story of its origin.

At Bella Loma Distillery, we honor not only the craft, but also the cultural heritage behind these spirits. Our logo is the face of an Aztec god, Huitzilopochtli. This Aztec god  is of sun, war, and human endeavor. His name is often translated as “Hummingbird of the South." In Aztec belief, hummingbirds were warriors reborn—small yet powerful, tireless in their journey.

This symbolism resonates deeply with the spirit of agave cultivation and distillation. Like the hummingbird, the process demands endurance, precision, and respect for nature’s cycles. Each harvest, each distillation is an act of dedication—transforming something rooted in the earth into something that uplifts and inspires.

Bella Loma Distillery carries this philosophy forward. In every sip, you’ll find more than flavor—you’ll find history, craftsmanship, and the enduring spirit of those who came before.
